| Maine Clam Cake Recipe Instructions:Using cooked clam meat, the meat should be chopped or minced. Mix the meat with diced onions, celery, and red and green peppers. The vegetables should be sautéed until tender before adding to the cake mixture. In a large mixing bowl, add the clam meat, sautéed vegetables, breadcrumbs, and three raw eggs. Mix together well and form into cakes 3 inches in diameter and about 1 inch thick. Thick cakes are easy to work with when frying. Fry using medium heat until golden brown on each side.
