Lobster Risotto Recipe |
Lobster Risotto Recipe Ingredients:- 4oz Cooked Lobster Meat, chopped
- 1/2 Onion - diced
- Fresh Black Pepper - to taste
- 2 teaspoons Olive Oil
- 1/2 cup Dry White Wine
- 1 cup Arborio Rice
- 3¾ cups Lobster Stock
- 1/2 cup grated Parmesan Cheese
- 3 tablespoons Sweet Butter
- Fresh Chives - for garnish

Lobster Risotto Recipe Instructions:Season onion with pepper then sauté in olive oil until translucent. Add white wine and reduce by two thirds then add rice and stir to coat. Over low heat, stir in stock a cup at a time, until absorbed. Once all stock has been added and absorbed, add lobster meat, grated cheese, and stir. Serve in small bowls and garnish with fresh chives.
