Lobster Soup Recipe Ingredients:- 2 Fresh Lobster Tails
- 1 tablespoon Ground Ginger
- 1/2 teaspoon Ground Red Pepper
- 1 tablespoon Peanut Oil
- 5 cups Chicken Broth
- 1 tablespoon Lime Rind - Grated
- 1/3 cup Long Grain Rice - uncooked
- 1 cup Unsweetened Coconut Milk
- 6 Large Fresh Mushrooms - sliced
- 1/2 cup Onion - chopped
- 1 tablespoon Fresh Cilantro - chopped
- 2 tablespoons Lime Juice
- Green Onions - chopped
- Fresh Cilantro Sprigs

Lobster Soup Recipe Instructions:Remove lobster from shell and slice the meat. Set aside. Cook red pepper and ground ginger in peanut oil in a large saucepan over medium heat about 1 minute then add chicken broth and lime rind. Bring to a boil and stir in rice. Cover reduce heat, and simmer 15 to 20 minutes. Add coconut milk and next 3 ingredients; cook 5 minutes, stirring occasionally. Add lobster meat, cook 3 - 5 minutes. Remove from heat, and stir in lime juice. Spoon into 6 bowls and garnish with cilantro sprigs if desired.
