Mussels in Black Bean Sauce Recipe Ingredients:- 1½ lb Fresh Mussels
- 2 tablespoons Chicken Stock
- 1 tablespoon Light Soy Sauce
- 1 tablespoon Rice Wine
- 1 teaspoon Chili Bean Sauce
- 1 tablespoon Bean Sauce
- 2 tablespoons Fermented Clack Beans
- 2 teaspoons Fresh Ginger - minced peeled
- 1 tablespoon Garlic - finely chopped
- 2 tablespoons Peanut Oil
- 3 tablespoons minced Whole Scallions

Mussels in Black Bean Sauce Recipe Instructions:Scrub mussels in cold water and pull off beards. Soak in a large bowl for cold water changing the water several time. Drain thoroughly just before cooking. Heat a wok until hot and add oil. Add garlic, black beans, and ginger, stir-fry 35 seconds. Add chili bean sauce and bean sauce and stir-fry for another 15 seconds. Add mussels and stir-fry for 1 minute. Add soy sauce, rice wine, and stock. Cook over high heat until the shells are completely open. Discard any unopened mussels. Garnish with the chopped scallions and serve.
