Mussels in Coconut Milk Thai Green Curry and Cilantro Recipe Ingredients:
  • 2 lb Mussels
  • 2 inch piece Lemon Grass
  • 2 tablespoons Vegetable Oil
  • 1 can Coconut Milk - shaken
  • 1˝ teaspoon Thai Green Curry
  • 2 Limes - juiced
  • 2 Green Onions - sliced
  • 2 tablespoons Cilantro - minced
  • 1 tablespoon Ginger - grated
  • 2 tablespoons Thai Basil - sliced
  • 2 Garlic Cloves - minced

Mussels in Coconut Milk Thai Green Curry and Cilantro Recipe Instructions:
  • Heat oil in a 6-quart stockpot over medium heat.
     

  • Mix the Thai green curry, ginger, green onions,  lemon grass and garlic in the stockpot, sauté for 1 minute.
     

  • Add coconut milk and lime juice. Bring to a boil, add mussels and cover tightly.
     

  • Steam mussels for 5 minutes or until cooked.
     

  • Discard any mussels that are unopened.
     

  • Add basil and cilantro, toss mussels in the steaming liquid.
     

  • Serve hot in a 2 - 4 bowl.
