Mussels in Coconut Milk Thai Green Curry and Cilantro Recipe Ingredients:- 2 lb Mussels
- 2 inch piece Lemon Grass
- 2 tablespoons Vegetable Oil
- 1 can Coconut Milk - shaken
- 1˝ teaspoon Thai Green Curry
- 2 Limes - juiced
- 2 Green Onions - sliced
- 2 tablespoons Cilantro - minced
- 1 tablespoon Ginger - grated
- 2 tablespoons Thai Basil - sliced
- 2 Garlic Cloves - minced

Mussels in Coconut Milk Thai Green Curry and Cilantro Recipe Instructions:Heat oil in a 6-quart stockpot over medium heat. Mix the Thai green curry, ginger, green onions, lemon grass and garlic in the stockpot, sauté for 1 minute. Add coconut milk and lime juice. Bring to a boil, add mussels and cover tightly. Steam mussels for 5 minutes or until cooked. Discard any mussels that are unopened. Add basil and cilantro, toss mussels in the steaming liquid. Serve hot in a 2 - 4 bowl.
