Mussels in Wine Sauce Recipe Ingredients:- 2 lb Live Mussels
- 1 (28oz) can sliced Tomatoes with Basil and Oregano
- 1/8 cup Red Pepper Flakes
- 4 tablespoons Butter
- 1/4 cup dried Chives
- 3 cups Merlot
- 1 tablespoon minced Garlic
- Pepper - to taste
- 2 tablespoons Fresh Lemon Juice

Mussels in Wine Sauce Recipe Instructions:Wash and scrub then remove beards from mussels, Set aside. In a large saucepan combine wine and butter. Bring to the boil and reduce heat to medium. Add chives, garlic and red pepper flakes. Mixing often, reduce volume by half. Turn heat up to high and add the tomatoes with juice, lemon juice and mussels. Stir once to coat, cover with a tight fitting lid. Boil for 2 -3 minutes. Remove from heat and discard any mussels that have failed to opened. Ladle mussels into serving bowls then pour remaining sauce on top. Season with pepper to your taste.
