Mussels Thai Style Recipe Ingredients:- 500g Mussels
- 2 tablespoons Sesame Oil
- 4 Garlic Cloves - finely chopped
- 2 Shallots - finely chopped
- 2cm piece ginger - peeled, finely sliced
- 1/2 bunch Fresh Coriander - washed
- 1/2 Lemon - zest only
- 2 Stalks Lemon Grass - bashed
- 300ml Fresh Fish Stock
- 1 teaspoon Fish Sauce
- Salt - to taste
- Freshly Ground Black Pepper - to taste
- 200ml Coconut Milk
- 1 tablespoon Fresh Coriander

Mussels Thai Style Recipe Instructions:Clean the mussels by scraping off any barnacles, removing beards and scrubbing the shells. Discard any open mussels that will not close when, put to one side in a bowl of salted cold water. Heat the oil in a heavy based sauté pan, sauté shallots and garlic until soft, add ginger, lemon zest, coriander and lemon grass, sweat for 2 - 3 minutes. Add fish sauce and fish stock to the pan, then reduce gently. Season to your taste. Add the drained mussels to the pan. Cover and cook for 4 - 6 minutes or until the mussels open. Discard mussels that do not open. Gently mix in the coconut milk and garnish with the coriander leaves serve immediately.
