Recipe for Steamed Mussels Ingredients:
  • 400g Fresh Mussels - cleaned, bearded
  • 1 Banana Shallot - finely chopped
  • 60g diced Pancetta
  • 30ml White Wine
  • 40ml Double Cream
  • 1/2 Cooking Apple - diced small
  • Parsley - to garnish
  • Olive Oil - for frying

Recipe for Steamed Mussels Instructions:
  • Heat a little olive oil in a small saucepan over medium heat.
     

  • Add the diced pancetta and gently fry until crispy. then add chopped shallot and cook until soft.
     

  • Turn up the heat to high, add the mussels, white wine, put the lid on and steam.
     

  • Cook until all the mussels have fully opened and are piping hot. Discard any shells that have failed opened fully.
     

  • Add double cream, turn down the heat.
     

  • Reduce the sauce until it is nice creamy and smooth then add diced apple.
     

  • Cook for 1 minute and turn out into a warm bowl.
     

  • Sprinkle with chopped parsley and serve.
