Recipe for Steamed Mussels Ingredients:- 400g Fresh Mussels - cleaned, bearded
- 1 Banana Shallot - finely chopped
- 60g diced Pancetta
- 30ml White Wine
- 40ml Double Cream
- 1/2 Cooking Apple - diced small
- Parsley - to garnish
- Olive Oil - for frying

Recipe for Steamed Mussels Instructions:Heat a little olive oil in a small saucepan over medium heat. Add the diced pancetta and gently fry until crispy. then add chopped shallot and cook until soft. Turn up the heat to high, add the mussels, white wine, put the lid on and steam. Cook until all the mussels have fully opened and are piping hot. Discard any shells that have failed opened fully. Add double cream, turn down the heat. Reduce the sauce until it is nice creamy and smooth then add diced apple. Cook for 1 minute and turn out into a warm bowl. Sprinkle with chopped parsley and serve.
