Recipe Mussels Ingredients:- 48 Fresh Mussels - scrubbed, washed
- Salt - to taste
- 2 Lemon Slices
- 2 teaspoons Lemon Juice
- 50g Soft Margarine
- 1 tablespoon Olive Oil
- 3 Garlic Cloves - crushed
- 1 Shallot - finely chopped
- 2 tablespoons chopped Parsley
- 3 tablespoons Fresh Wholemeal Breadcrumbs
- Parsley Sprigs - for garnish
- Lemon Wedges - for garnish

Recipe Mussels Instructions:Place the mussels in a saucepan of boiling salted water. Add lemon slices, cover and cook for about 7 minutes, until the mussels have opened. Remove mussels with a slotted spoon, discarding any that have not opened. Remove the empty top shells from the mussels and discard. Beat the remaining ingredients together and spread the mixture on top of the mussels. Place on a baking sheet and cook in the oven for 5 minutes or until golden. Arrange on serving dish and garnish with the parsley and lemon.
