Oyster Soup Brennan Recipe Ingredients:- 4 dozen Large Freshly Shucked Oysters
- 12 cups Oyster Water -use oyster liquor plus enough water to make up 12 cups
- 1 cup Butter
- 2 cups Celery - finely chopped
- 1 cup Green Onions - finely chopped
- 1¼ cup Flour
- 2 tablespoons Garlic - finely chopped
- 4 Bay Leaves
- 1 teaspoon White Pepper
- 2 teaspoons Salt

Oyster Soup Brennan Recipe Instructions:In a 6 quart heavy saucepan melt butter over medium heat, sauté the celery and green onions until tender but not browned, stirring frequently. Gradually mix in the flour and cook for 5 minutes, stirring constantly over low heat, add the remaining ingredients and simmer for 12 minutes. Remove the pan from the heat then take out the bay leaves and discard. Serve immediately.
