Oyster Stew Recipe

Oyster Stew Recipe Ingredients:
  • 1 (12oz) container Fresh Oysters - un-drained
  • 2 tablespoons Butter
  • 1 tablespoon Canola Oil
  • 1 Small Onion - chopped
  • 1 Medium Carrot - diced
  • 2 Celery Ribs - chopped
  • 1/2 cup White Wine
  • 4 cups Whipping Cream
  • 2 Medium Yukon Gold Potatoes, cut into 1-inch cubes
  • 1˝ teaspoons Salt
  • 1/2 teaspoon Freshly Ground Pepper
  • 2 Plum Tomatoes - chopped
  • 8 Bacon Strips - cooked, crumbled
  • Fresh Chives -chopped

Oyster Stew Recipe Instructions:
  • Drain oysters, reserving liquor, set aside.
     

  • Melt butter in canola oil in a Dutch oven over medium heat; add carrot, onion, and celery. Sauté 5 minutes or until tender.
     

  • Add white wine and reserved oyster liquor and simmer 5 minutes or until reduced by half.
     

  • Stir in whipping cream, cubed potatoes, salt, and pepper; simmer 15 minutes or until cream is slightly thickened and potatoes are tender.
     

  • Add oysters, and cook 3 minutes or until edges begin to curl, stir in chopped tomatoes.
     

  • Remove from heat and place in 4 bowls.

    sprinkle each serving with crumbled bacon and chives and serve.
