| Oyster Stew Recipe | Oyster Stew Recipe Ingredients:- 1 (12oz) container Fresh Oysters - un-drained
- 2 tablespoons Butter
- 1 tablespoon Canola Oil
- 1 Small Onion - chopped
- 1 Medium Carrot - diced
- 2 Celery Ribs - chopped
- 1/2 cup White Wine
- 4 cups Whipping Cream
- 2 Medium Yukon Gold Potatoes, cut into 1-inch cubes
- 1˝ teaspoons Salt
- 1/2 teaspoon Freshly Ground Pepper
- 2 Plum Tomatoes - chopped
- 8 Bacon Strips - cooked, crumbled
- Fresh Chives -chopped

| Oyster Stew Recipe Instructions:Drain oysters, reserving liquor, set aside. Melt butter in canola oil in a Dutch oven over medium heat; add carrot, onion, and celery. Sauté 5 minutes or until tender. Add white wine and reserved oyster liquor and simmer 5 minutes or until reduced by half. Stir in whipping cream, cubed potatoes, salt, and pepper; simmer 15 minutes or until cream is slightly thickened and potatoes are tender. Add oysters, and cook 3 minutes or until edges begin to curl, stir in chopped tomatoes. Remove from heat and place in 4 bowls.
sprinkle each serving with crumbled bacon and chives and serve.
