Recipe for Oyster Mignonnette Sauce

Recipe for Oyster Mignonnette Sauce Ingredients:
  • 36 raw oysters - on the half shell

    Mignonette Sauce:
  • 1/2 cup Dry White Wine
  • 1 tablespoon Sherry Vinegar
  • 1 Shallot - finely chopped
  • White Pepper - to taste

Recipe for Oyster Mignonnette Sauce Instructions:
  • Place vinegar, wine in saucepan and reduce to half.
     

  • Turn heat off and mix in the shallot, white pepper, set aside to steep.
     

  • When you shuck your oysters, collect their juices and add to the mignonette sauce.
     

  • Serve the sauce in small dishes letting your guests spoon it on top of each chilled, raw oyster on the half shell.
