 Malaysian Style Prawns and Okra Recipe

Malaysian Style Prawns and Okra Recipe Ingredients:
  • 300g King Prawns – peeled, deveined, butterflied
  • 200g Okra – sliced in half  lengthwise, washed
  • 3 Cocktail Potatoes – washed, cut
  • 1 Tomato – diced roughly
  • 1 tablespoon Chilli Paste
  • 3 Small Shallots
  • 2 Garlic Cloves
  • 5 Brazil Nuts
  • 4 Anchovy Fillets
  • 1 heaped teaspoon Tamarind Paste
  • 2 teaspoon grated Palm Sugar
  • Oil - for frying
  • Water -  as needed
  • Cooked Steamed Rice - for 2 people

Malaysian Style Prawns and Okra Recipe Instructions:
  • Blend the shallots and garlic in a food processor,  until fine. Add the chilli, brazil nuts, anchovies and 2-3 tablespoons of water. Process to combine into a medium-thick paste.
     

  • Heat oil in a saucepan then add in paste and fry till fragrant – do not burning, add in a cup of water, tamarind, potatoes and tomato.

    Place the lid on and cook for about 10 - 12 minutes. Add okra and water if needed. Add sugar and salt to taste.
     

  • Cook on medium to low heat for 10-15 minutes.
     

  • When the okra is tender, add prawns and combine well. Cook through.
     

  • Serve hot with steamed rice.
