 Prawn Curry Recipe

Prawn Curry Recipe Ingredients:
  • 450g peeled Cooked Prawns
  • 1 tablespoon Ground Coriander
  • 1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Chilli Powder
  • 1/2 teaspoon Turmeric
  • 1 Garlic Clove - crushed
  • 1 cup Fish Stock
  • 2 tablespoons Oil
  • 1 Large Onion - finely chopped
  • 3 tablespoons Tomato Puree Paste
  • 2 Tomatoes - peeled, seeded, chopped
  • 1/2 lemon - juice of
  • 2 teaspoons Coconut Cream
  • Coriander Sprigs - to garnish
  • Cooked Basmati Rice - for 4 people

Prawn Curry Recipe Instructions:
  • Combine all the spices in a small bowl, Add the garlic and mix to a paste with a little of the stock. Set aside.
     

  • Heat the oil in a frying pan.
     

  • Add the onion and fry for 4-5 minutes until golden brown, add the tomato puree and spice mixture, cook for 1-2 minutes, mix in the remaining stock and tomatoes, cover the pan and simmer gently for 20 minutes.
     

  • Add the prawns and lemon juice to the frying pan, with the coconut cream, stir until the coconut cream dissolves, then simmer for 5 minutes.
     

  • Garnish with coriander sprigs and serve with basmati rice.

  • Remember to only add a little salt to fish dishes
