 Prawns Curry Recipe

Prawns Curry Recipe Ingredients:
  • 20 Uncooked King Prawns - heads removed, peeled, tails left on
  • 2 teaspoons Oil
  • 2 tablespoons Green Curry Paste
  • 500ml salt-reduced Chicken Stock
  • 1 can (270ml) Light Coconut Cream
  • 1 Small Red Capsicum - seeds removed, chopped coarsely
  • 1 punnet Baby Corn - halved lengthwise
  • 45g Broccoli Flowerets
  • 75g Snow Peas - trimmed
  • 2 teaspoons Lime Juice
  • 2 tablespoons Thai Basil Leaves
  • Cooked Rice - for 4 people

Prawns Curry Recipe Instructions:
  • In a large deep non-stick frying pan heat oil over medium heat.
     

  • Add curry paste and stir fry for 1 minute. Combine in coconut cream and chicken stock. Bring to a low boil, reduce heat to medium-low.
     

  • Add in baby corn, capsicum and broccoli. Cook for 8-10 minutes or until tender. Add snow peas and prawns.
     

  • Cook for a further 2-3 minutes or until prawns are cooked through, mix in lime juice and basil leaves, and serve with rice.

  • Remember to only add a little salt to fish dishes
  • If required, serve with your choice of sauce
