Salt and Pepper Prawn Recipe Ingredients:- 2 teaspoons Black Peppercorns
- 2 teaspoons Sea Salt Flakes
- 1¼ cups Rice Flour
- 1 Egg - Lightly Beaten
- 1 cup Soda Water
- Vegetable Oil - for deep frying
- 1kg Green Prawns - peeled, tails intact, deveined
- Lime Wedges - to serve

Salt and Pepper Prawn Recipe Instructions:Put the peppercorns in a small frying pan over medium heat and cook for 2 minutes shaking pan occasionally. Transfer to a mortar and pestle, add sea salt and grind to a coarse powder. Sift 1 cup rice flour into a bowl then make a well in the centre and add in egg, whisk to form a smooth batter, adding soda water gradually as you go. Pour oil into a large heavy-based wok until one-third full. Heat over medium heat until hot. Lightly roll prawns in remaining rice flour. Dip into batter and drop into oil. Cook, in batches, for 1 - 2 minutes or until crisp. Remove prawns and place on paper towel to drain, Place in 4 bowls. Sprinkle with salt and pepper mixture and toss to combine then serve with lime wedges.
