Shrimp Corn Chowder Recipe Ingredients:- 1/2 lb Shrimp - peeled, deveined, and cut into 1/2-inch pieces
- 3 cups Low-Sodium Chicken Broth
- 3 cups diced Red Potatoes
- 1 (16oz) package Frozen White Shoepeg Corn - thawed
- 1 bunch chopped Scallions
- 1 tablespoon Fresh Lemon Juice
- 1/4 cup Heavy Cream
- Salt - to taste
- Freshly Ground Pepper - to taste

Shrimp Corn Chowder Recipe Instructions:In a medium saucepan, boil chicken broth and potatoes 5 minutes, add corn and white parts scallion then simmer for 8 minutes. Remove 2 cups and puree in a blender. Return to pot. Mix in the shrimp and cook until bright pink; stir in lemon juice, cream, and scallion greens. Season with salt and freshly ground black pepper.
